PlutoSurvivor | Anyone have unusual recipes for Lentil Soup? It's great energetically to eat beans and legumes at the start of the new year - sowing seeds for the future. I can share my favorite Lentil Soup - it's unusual because it is made with wine. And so easy because you don't need to have a broth or stock on hand - just use water. It's bursting with flavor from the wine and spices. Double the recipe or quadruple it - it freezes well for a quick hearty meal. Lentil Soup Monasticas ----------------------
1 cup dried lentils (I like it with the Beluga Lentils - something a little different) 4 cups water 1 Tablespoon salt 1/8 teaspoon each dried thyme and marjoram --- 3 onions, chopped 1 carrot, chopped 1/4 cup olive oil 1/4 cup fresh minced parsley 2 plum tomatoes, chopped 1/4 cup dry sherry (or Florio Dry Marsala preferred) --- Grated Swiss or Parmesian cheese Pick and wash lentils (do not soak) Put in a pot with water, salt, herbs. Bring to boil, cover and simmer 15 minutes. --- Saute onion and carrot 5 minutes in olive oil. Add mixture to lentils along with with parsley, tomato and wine. Cover, simmer 1 hour or more until lentils are tender. Turn the burner off and let it stand for another hour before serving. --- Serve with pastina and grated cheese sprinkled on top.

PlutoSurvivor | Oh, I want to make another comment about eating lentils at the new year. Because there are so many, each seed represents prosperity and abundance throughout the year. So eating more lentils creates the abundance and prosperity for you energetically. |

I'm going to add kale next time. I've experimented with wild rice and other grains, but kale would work great with the sweet Marsala wine. Thanks. |

I will let you know. I use spinach, Swiss chard, escarole, beet greens in soup, cabbage even, but never thought about the kale. I will have to start using it in smoothies and juicer again. |
